## Who is Eden Butvinik?

Eden Butvinik is a versatile freelance food scientist consultant with a unique blend of expertise in both food science and photography. Balancing innovation with regulatory compliance is a key challenge for food scientists like Eden Butvinik. "Having everything distributed digitally, having paperwork digitized is really fantastic in order to do note-taking and making sure that everything is up to code," she explains.

However, the topic of AI is more complex. Eden has observed a growing interest in using AI to create recipes and provide innovative ideas to food business owners. While this prospect intrigues her, she raises a critical point: AI-generated recipes might not always adhere to strict food safety and compliance standards. Without the proper education and verification processes, AI could produce formulations that overlook essential compliance factors, such as maintaining correct pH levels for food safety.

Eden's balanced view underscores the need for careful implementation of AI in food technology. She believes that while AI can be a powerful tool for innovation, it must be guided by expert knowledge to ensure that the high standards of food handling and compliance are consistently met.

## Recipe Trends and What They Mean for the Future 

When meeting with clients about product development, Eden Butvinik often assumes they want [sugar-free formulations](https://blog.trustwell.com/get-the-scoop-on-added-sugar-labeling?hsLang=en). This assumption reflects a broader industry trend towards reducing or eliminating ingredients perceived as unhealthy.
